Apple + Honey Cake

It’s finally Fall baking time! Let’s start the season off with this pretty easy apple and honey cake. Anything that can be completed in a couple hours with no make ahead ingredients sounds good to me! Who else is excited for all the apple (and pumpkin!) recipes to come?!

Apple Topping

3 medium sized apples, cored, peeled and sliced into thin slices

3/4 cup honey

3 tsp vanilla extract

1/4 cup orange juice

Juice of one small lemon

Cake

1 1/2 cup flour

1 tsp baking powder

1 tsp cinnamon

1/4 tsp nutmeg

1/8 tsp ground cloves

1.5 stick unsalted butter

1/2 cup brown sugar

3 eggs

1/2 cup plain yogurt

 

Combine honey, vanilla, lemon juice, and orange juice in a large skillet. Keep on medium until thickens a bit, then switch to low- simmer. Add in the apple slices and cook for 10-15 minutes, making sure they turn a nice golden brown. Take apples out and let cool while you make the cake batter. Do not discard the contents of the skillet.

Meanwhile, preheat oven to 350F and combine flour, baking powder, cinnamon, nutmeg, and cloves in a large bowl, and whisk well. Set aside. In the bowl of your stand mixer, add butter, cubed, and sugar and beat until soft. Next add in eggs and make sure well mixed. Now mix in dry ingredients, alternating with yogurt. Spread batter into a 9-12 inch rectangular baking dish which has been covered in parchment paper, and top with apple slices. Bake in oven for 35-45 minutes or until a  toothpick inserted into the cake comes out clean. Remove from oven and let cool a bit. Now brush top of cake with remaining honey syrup from skillet.

Eat warm on it’s own or with vanilla ice cream! Yum!
