Caramelized Pear Upside Down Cake

If you’re looking for an easy and tasty little cake that’ll be gone before you know it – this is for you! It’s super moist and has a crispy caramel-y pear taste on top!

 

What you’ll need:

For the cake batter:
Butter
sugar
eggs
flour
baking powder
salt
cinnamon
ginger
nutmeg
buttermilk
pears

For the Caramelized pear topping:
Pears
butter
brown sugar
cinnamon
nutmeg

To make the cake batter:

Wash, peel, and grate 2 large pears and set them aside. Cut your butter into small cubes and beat with the paddle attachment in your stand mixer until fluffy. Add the sugar and continue mixing until fully incorporated. Next you’ll  add the eggs and mix. Meanwhile, in a separate bowl, combine the flour, baking powder, salt, and spices and whisk together. Add the dry ingredients, alternating with the buttermilk, to your stand mixer while mixing. Once combined, add in the grated pears and mix together.

 

To make the caramelized pear topping:

Preheat oven to 350ºF. Butter your 8 inch springform baking pan and spread your melted butter over the bottom of the pan. Sprinkle the brown sugar over the butter evenly. Cut your peeled pears into thin slices lengthwise. Coat these slices with the spices in a small bowl. Arrange the slices in the bottom of the pan over the sugar. You can place them in a circular pattern or however you’d like!  Next, pour your batter over the pears. Bake for 45 minutes, or until a toothpick comes out clean. Remove from oven and let cool 10 minutes before inverting onto your cake stand.

Ingredients

The Cake

  • ½ cup butter
  • 1 cup sugar
  • 3 eggs
  • cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • ¼ tsp ginger
  • ¼ tsp nutmeg
  • ½ cup buttermilk
  • 2 large pears peeled and grated

Caramelized Pear Topping

  • 2 pears peeled
  • ¼ cup butter melted
  • ¾ cup brown sugar
  • ½ tsp cinnamon
  • ¼ tsp nutmeg

Instructions

The Cake

  • Cut butter into small cubes and beat until fluffy in your stand mixer. Add the sugar and continue mixing until fully incorporated. Next add the eggs and combine. 
  • In a separate bowl, combine the flour, baking powder, salt, cinnamon, ginger, and nutmeg, and whisk together. Add these dry ingredients, alternating with the buttermilk, to your stand mixer while mixing on low. Once combined, add in the grated pears and mix together.

Caramelized Pear Topping

  • Preheat oven to 350ºF. Butter your 8 inch springform baking pan. Then spread the melted butter over the bottom of the pan. Sprinkle the brown sugar over the butter evenly.
  • Cut your peeled pears into thin slices lengthwise. In a small bowl, mix together the cinnamon and nutmeg, and coat the pear slices with these spices. Arrange the slices in the bottom of the pan over the sugar in a circular pattern, covering the whole bottom of the pan. 
  • Pour your prepared cake batter over the pears. Bake for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove from oven and let cool 10 minutes before inverting onto your cake stand. Let cool to room temperature before slicing and serving.
