    Strawberry Rhubarb Pie

    eyedocbakes

A classic strawberry rhubarb pie, with my easy buttery flaky pie crust, and a perfectly sweet, with a hint of tart filling! Are you a rhubarb fan? As seen in my last rhubarb post, I looove the color of rhubarb. Of course, it can be a little tart on its own, so not everyone enjoys it. However, it marries perfectly with strawberry to make a deliciously pink filled pie. For this recipe I used my classic pie dough and paired it with an easy blend of strawberries and rhubarb, to make a pie that everyone can enjoy. It’s perfect for…

    Strawberry Rhubarb Ricotta Tart

    eyedocbakes

This dessert is the perfect combination of tart and sweet, and all about that pink! A little sour rhubarb combined with sweet strawberries, decadent ricotta mixed with a jam made from those same strawberries and rhubarb, all set in this beautiful pastry tart crust. This dessert just screams Spring!  It’s finally rhubarb season! And I was finally able to secure some beautiful pink rhubarb!  A few weekends ago I went strawberry picking, so the berries used in this tart are farm to table. Though they didn’t grow rhubarb on this farm, they did have some at their little farm store,…

  • sweet blueberry curd fills this shortcrust pastry to make a yummy blueberry meringue tart

    Blueberry Meringue Tart

    eyedocbakes

A refreshing yet richly flavored blueberry curd, made with fresh blueberries and orange juice, fills this sweet shortcrust pastry. Topped with meringue that is torched to perfection, and some fresh fruit – you’ll want to make sure you have extra tarts, because everyone will be asking for more! Also, the beautiful natural dark purple color of these tarts makes them a show stopper!  It’s funny, because as a food blogger, we always test our recipes ahead of time. So that means that even though, for example. Valentine’s day is February 14th – I was making and testing all the pink…

    Lemon Meringue Tart

    eyedocbakes

Could you tell yet that tarts are my favorite dessert? Well, if not, here is another one to prove it! A classic lemon meringue pie…but in a tart… with a sweet shortcrust pastry shell, a tart lemon curd, and a perfectly sweet and toasted meringue. Served cold, this is a fantastic dessert for a hot summer day, bursting with lemon-y freshness. The great thing is you can do so much with the leftover lemon curd too. I like to use it on top of pancakes or waffles for breakfast, fill cupcakes with it, or even just as it’s own dessert…

Let’s continue our international travel through the kitchen! Last week I shared a Norwegian style pastry with you guys. In continuing with our travel plans, I bring you Pasteis de Nata! These are yummy Portuguese style custard tarts that are dangerously easy to eat, since they’re bite sized and made with an easy homemade puff pastry! I actually have a little bit of history with this dessert! I first tried these pastries about a decade ago when I visited Portugal. At the time, I was definitely not into baking, and so I just enjoyed eating a couple (or 10) of…

  • Blood Orange + Berry Tart

Don’t you love a great citrus season? I’d been wanting to make a bright and wonderful tart, but didn’t have enough berries since it’s a bit too early. Welcome – citrus season! The color of this tart comes out so beautifully, you barely need anything to decorate it at all. I decided to add some candied oranges to enhance it a bit. I also usually love making a shortcrust for tarts, but I wasn’t in the mood to do too much baking in the oven – so I went with a cookie crust. This would be a great dessert to…

Use a spoon to press these into the tart pan (with removable bottom – makes everything that much easier). Bake this crust in…
