Chocolate Strawberry Overnight Oats

What could be better than chocolate and strawberries for Valentine’s Day? Healthy Chocolate and Strawberries for Valentine’s Day! These mini overnight oats, made in the little Oui Yogurt jars, make for a perfect Valentine’s snack, or light breakfast snack for the day! It’s also a great addition to a Galentine’s Day Brunch. 

I love having overnight oats in the fridge, because I always know that I have breakfast ready in the morning in a pinch. My basic recipe for overnight oats includes a base of old fashioned oats, chia seeds, and almond milk. Lately I’ve loved adding cinnamon to the base. In the case of these overnight oats, I’ve added cocoa powder and some yogurt to the base, as well as pure maple syrup to sweeten it up a bit naturally. If you don’t have as big of a sweet tooth, you can leave that out, or add it in later on top to your taste. Then we alternate with layers of yogurt of your choice, and fresh strawberry, as well as some melted chocolate, and topped with a chocolate covered strawberry!

What you’ll need. . .

yogurt (plain Greek or dairy free)

maple syrup

milk (dairy or dairy free)

cocoa powder

old fashioned oats

chia seeds

strawberries

dark chocolate chips or chopped dark chocolate

To make these overnight oats, I used 4 small oui yogurt glass jars. You can use two larger jam jars or two glasses instead. In a small bowl, mix together yogurt, maple syrup, milk, and cocoa powder until well combined. Add your old fashioned rolled oats and chia seeds to each jar. Mix. Fill each container with your chocolate milk/yogurt mixture and stir together. If it seems a bit too dry, add 1/2 tbsp -1 tbsp milk and mix in. Cover each jar with plastic wrap and place in the refrigerator overnight.

The next morning you’ll finish your overnight oats! Start by melting your dark chocolate (melt in a microwave safe glass bowl, mixing every 30 seconds until melted) and dipping 4-8 small strawberries. Let harden in the refrigerator. Meanwhile, I used the inside piece of my linzer cookie cutter (similar to what I have) to cut out tiny hearts from the strawberries to decorate with. This is totally optional! To do this, I cut the largest strawberries I had in half, and cut out 3-4 hearts from each side, seed side up. Place about 3 on the inside of each jar, facing out. Now take your melted dark chocolate, and using a spoon or fork, swirl some chocolate around the inside of each jar, and spoon a little onto the top of the oats. Next add some more yogurt. Then add a layer of strawberries that have been chopped into small pieces. Add some more chocolate, then yogurt again. Add a bit more maple syrup – more if you like it sweeter. Top with some strawberry hearts and a chocolate covered strawberry. And breakfast (or snack) is served! 

Some notes. . .

  1. The great thing about overnight oats is that you can customize it to your taste. If you prefer more or less chocolate or strawberry, go ahead! If you prefer, more sweetness, add more pure maple syrup!  You can also leave out the chia seeds if you prefer.

Ingredients

  • ½ cup +6 tbsp yogurt plain Greek, or non dairy, divided
  • 3 tsp pure maple syrup divided
  • ¾ cup milk dairy or non dairy
  • 1 tsp cocoa powder
  • 12 tbsp old fashioned rolled oats
  • 2 tbsp chia seeds
  • 12 strawberries 4-8 small, for dipping
  • 6 oz dark chocolate dark chocolate chips, or chopped dark chocolate

Instructions

  • In a small bowl, mix together 6 tbsp yogurt, 1 tsp maple syrup, milk, and cocoa powder until well combined. Add 3 tbsp of your old fashioned rolled oats and ½ tbsp of chia seeds to each jar. Mix. Fill each container with 3-4 tbsp of your chocolate milk/yogurt mixture and stir together. If it seems too dry, you can add 1/2 -1 tbsp of milk to each jar, and mix. Cover each with plastic wrap and place in the refrigerator overnight.
  • The next morning, start by melting your dark chocolate (melt in a microwave safe glass bowl, mixing every 30 seconds until melted) and dipping 4-8 small strawberries. Let set in the refrigerator. Meanwhile, use a small heart cookie cutter to cut out tiny hearts from the strawberries to decorate with. This is totally optional! To do this, cut the largest strawberries in half, and cut out 3-4 hearts from each side, seed side up. Place about 3 on the inside of each jar, facing out.
  • Now take your melted dark chocolate, and using a spoon or fork, swirl some chocolate around the inside of each jar, and spoon a little onto the top of the oats. Next add about a tablespoon of yogurt to each jar. Then add a layer of strawberries that have been chopped into small pieces. Add some more chocolate, then 1 tbsp of yogurt again to each jar. Drizzle yogurt in each jar with 1/2 tsp maple syrup - more if you like it sweeter. Top with some strawberry hearts and a chocolate covered strawberry or two. Enjoy!

Notes

  1. There is a lot of room for variability in overnight oats - and a lot of it depends on your taste. If you like things a bit sweeter, add more pure maple syrup, or even use a vanilla flavored yogurt. If you like more chocolate, add more melted chocolate to each jar. If you prefer more strawberries, add more to each jar as well!
