Dark Chocolate Brownie Kiss Cookies

Still in need of some Christmas cookies? Then these Dark Chocolate Brownie Kiss Cookies are your new best friends! They don’t take any extra chilling time, and can be done in about15 minutes! These are for my dark chocolate lovers, as the brownie cookies are made with 85% dark chocolate, and the kisses are also dark chocolate! Bake them for the Holidays or anytime you need a serious chocolate fix!
What You’ll Need. . .
Unsalted Butter
dark chocolate
granulated sugar
brown sugar
eggs
vanilla extract
flour
cocoa powder
kosher salt
baking powder

In a microwave safe bowl, melt together the dark chocolate and butter in 20 second intervals, mixing in between. In the bowl of your stand mixer with the whisk attachment, mix eggs, sugars, and vanilla. Once the butter-chocolate mixer has cooled a bit, pour it into the bowl of your stand mixer and whisk together until combined. Preheat oven to 350F. In a separate bowl whisk together the flour, cocoa powder, salt, and baking powder. Use a silicone spatula to mix the dry ingredients into the wet ingredients until just combined. Use a small cookie scoop to scoop out cookies onto a parchment lined baking sheet, two inches apart. Makes about 24 little cookies. Bake 10 minutes, and remove. After cooling 1-2 minutes, lightly push a dark chocolate kiss into the center of each brownie cookie. Let cool and enjoy! Now wasn’t that easy peasy?!
Some Notes. . .
- I used 1/2 tsp peppermint extract, but you can cut that in half if it’s too much peppermint for you. Or leave it out if you just want cranberry and a hint of peppermint from the candy canes on top!
- You can store these in an airtight container for up to one week.
