Lemon Kefir Panna Cotta

Do you remember the first dessert you ever made? Mine was panna cotta. Ok ok, it wasn’t the very first dessert I EVER made, but it was the first dessert I made by myself when I started on this food journey! I remember being so proud of making it! I realized I’ve made it a couple times since, but never wrote a blog post on it! So, today I’m bringing to you a little variation on a typical panna cotta, because I made this one with healthy and amazing kefir! I love making a panna cotta in a champagne glass. This is the perfectly classy dessert for New Years Eve, that you don’t even have to be too guilty about eating, since it’s made with kefir!

What You’ll Need . . .
- gelatin
- milk (reduced fat)
- heavy cream
- granulated sugar
- vanilla extract
- lemon kefir
- fresh berries
- sprinkles
Making the Panna Cotta. . .
- Dissolve gelatin in milk in a saucepan for 5 min. Then, turn heat on low and whisk while heating about four minutes. Do not allow to boil.
- Add heavy cream, granulated sugar, and vanilla extract to saucepan (still on low heat) and continue whisking while heating until sugar dissolves – about 5 minutes. Then remove from heat and let cool 5-10 minutes.
- Prepare a large bowl with 1 cup of lemon kefir (shake before pouring into bowl). Slowly whisk cooled mixture into lemon kefir. Pour equally into 4 champagne glasses and refrigerate at least 3 hours to overnight. Top with berries or sprinkles for a festive and classy New Years Eve dessert!
