Lime Cranberry Blondies

Can a dessert be sweet, tart, chewy, and refreshing all at the same time? I’m here to tell you – it can! These lime cranberry blondies are sooo good, I nearly finished them all myself! The blondie is the perfectly chewy texture, with sweet little bites of white chocolate chips. Then you have the dried cranberries, which add that tartness and pops of red color. Finished off with some lime, and you have a surprisingly refreshing blondie that’s hard to put down! So since it’s the week between the Holidays and New Years, and we’re neither here nor there – let’s just all make this blondie recipe and call it a day, am I right??! 

What You’ll Need:

unsalted butter

brown sugar

granulated sugar

eggs

lime zest

lime juice

vanilla extract

vegetable oil

flour

baking powder

salt

white chocolate chips

dried cranberries

Melt the butter in a microwave safe bowl. Let it cool. Add the butter and sugars to the bowl of your stand mixer, and combine with the paddle attachment a few minutes, until smooth. Butter a 9×13 inch baking pan and preheat oven to 350F. Add the eggs, lime juice and zest (reserve some for the top), vanilla extract, and vegetable oil into your stand mixer bowl, and mix until combined. In a separate bowl, whisk together the flour, baking powder and salt. Add this into the bowl of your stand mixer and mix. Add in the white chocolate chips and dried cranberries, and pulse a few times to evenly distribute them. Spread batter into your prepared baking dish, and place a few more chips, cranberries, and sprinkle some zest on top. Bake for 30-35 minutes. Cool for 10 minutes before cutting. Enjoy!

Some Notes. . .

  • 1 cup white chocolate chips extra for topping
  • 1 cup dried cranberries extra for topping
