Strawberry Chocolate Chip Skillet Cookie

Have you guys ever tried a pizookie? Years ago when I learned why it was called “pizookie”. . . it blew my mind. It’s a pizza cookie, ie a deep dish skillet baked cookie! Did everyone know this? Anyway, when you’re not in the mood to make a bunch of small cookies, wait while they refrigerate (which by the way, totally worth it), and just want to DIG INTO a steaming hot chocolate chip strawberry cookie topped with cool vanilla ice cream – this is the recipe for you! The strawberries add a little fresh bite to each chocolate-y cookie bite goodness, and if anyone asks. . .you just had one cookie! 

What you’ll need. . . 

butter

brown sugar

granulated sugar

egg

vanilla

flour

baking soda

salt

chocolate chips

strawberries

 

The preparation is pretty easy! Preheat your oven to 350F. Chop the strawberries up into small cubes, reserving a couple for slices to place on top of the cookie. Set aside. Meanwhile, in your stand mixer, combine the butter and both sugars and beat with the paddle attachment until all mixed in and smooth. Add in the egg and vanilla and continue mixing until incorporated. In a medium bowl, mix together the flour, baking soda, and salt. Pour these dry ingredients into your stand mixer while mixing on low. Toss in the chopped strawberries and chocolate chips (reserving some of the chips for the top of the cookie). Spread the cookie dough into your pre-buttered cast iron skillet. Bake for 30 minutes, and remove and let cool for 10 minutes. You can top with some ice cream and drizzle with chocolate and dig in! 

Some Notes. . .

  1. If you don’t eat it up right away, you can cut into slices and store in airtight container in the refrigerator, reheating before eating. 
  2. You can play around with some of the ingredients. For example, you can try white chocolate chips or nuts instead of the chocolate chips, and you can try different berries or fruit – it works great with cherries and blueberries too.

Ingredients

  • 1 cup unsalted butter
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • cup flour
  • 1 tsp baking soda
  • ½ tsp salt
  • cup chocolate chips extra for topping
  • 6 large strawberries

Instructions

  • Chop 4 of the strawberries into small cubes, reserving two strawberries for the top of the cookie. Slice the two strawberries so that it appears as seen in the photos. Set aside. 
  • In your stand mixer, mix the butter, brown sugar, and granulated sugar until smooth. Add in the egg and vanilla and mix.
  • In a medium bowl, mix together the flour, baking soda, and salt. Pour into your stand mixer while mixing on low. Mix in the chopped strawberries and chocolate chips.
  • Spread the cookie dough into your pre-buttered 10-10.5 inch cast iron skillet. Place extra chocolate chips and strawberry slices over the top of the cookie and press in a little. Bake for 30 minutes and remove and let cool 10 minutes, and eat right away; or let cool fully and then enjoy. Also, feel free to top with ice cream scoops/melty chocolate drizzle!

Notes

  1. You can use any skillet that is oven safe. 
  2. You can replace strawberries with cherries, blueberries, blackberries, raspberries, etc.
